How does a Lawson Talk member's "level" get changed? :nix:

It has to do with the number of posts you've made. I hit level 7 at 200 posts - the breakdown is below

level 7 - >200
level 5 - >100
level 3 - >30
level 2 - >10
level 1 - <10

And if you want to change the "Newbie" title - that's in your Profile. It's called Custom Member Level and it's plain text, so create whatever you want.
